Started by three childhood friends, Cava celebrates the flavors of their families’ traditional Greek and Mediterranean cooking in a casual modern setting. This roll-out prototype is a fast-casual spin-off from the original Cava traditional dining restaurant. It features modern abstractions of the Mediterranean vernacular utilizing simple, rustic finishes, copper light fixtures, and digital wall graphics depicting scenes of pastoral Greece. Millwork, furniture arrangements, menu graphics, and a custom lightbox at the entry establish a separation between the dining and queuing areas, creating a clear circulation throughout the space. Due to the success of the initial Cava prototype, HapstakDemetriou+ was brought in to create the second iteration. Cava sought to energize its customer base with an updated image. This prototype features abstractions of the Mediterranean vernacular, utilizing clean lines alongside both rustic and simple finishes. 2018 IIDA Premiere Design Awards (Mid Atlantic Chapter) Award of Merit in category Under 7,500SF (CAVA Nolita).
